I would like to start off this post by saying I don’t like mayo and therefore, was skeptical when attempting this recipe. I have tried a few different paleo mayo recipes but this one is my favorite and it’s right out of the “It Starts With Food” book. I use this as a base for many sauces and it mixes well with canned salmon or diced chicken. It really is a Whole 30 staple!
My favorite way to switch this up is adding finely diced cilantro and a squeeze of lime. I’ll use this as veggie dip or drizzle it over taco’s or really anything. YUM
- 1 egg
- 2 Tbsp lemon juice
- 1/4 C + 1 C olive oil. (I've also used avocado oil and it was delicious. DO NOT try extra virgin olive oil because it doesn't set as nicely)
- 1/2 tsp dry mustard powder
- 1/2 tsp salt
- Put the egg in a blender and add the lemon juice. Let these come to room temperature (about 30 mins) then add the 1/4 C oil, dry mustard and salt. Turn on the blender and mix until combined. Now here's the tricky part, while the blender is running SLOWLY drizzle the remaining oil into the mixture. This should take you about 2 or 3 minutes to completely add the 1 cup of oil. If you put the oil in too quickly the mayo will not thicken and instead you will end up with an oily mess.
- ** A tip that I discovered was to place the remaining 1 cup oil in a zip lock bag and cut a tiny hole in a corner. I place the bag over my blender so nothing shoots up at me and at the same time it's slowly adding oil. If you do this test the size of hole with water first because it's smaller than you might think **
Here’s just a few things that I used this sauce for this week.
Fry Salad. I think I’m coining that phrase but I like it. I added half an avocado to this as well as the lime and cilantro and just blended it together.
Sweet Potato Boats. I added some chili pepper with cilantro and lime to give this a little kick.
